The Mix-Fix: Super Quick Green Grain-Free “Oatmeal”

Hey, don’t look at me as if I’m some stranger–it’s been a busy year, and, alas, this little ol’ blog of mine has had to take a backseat. But I had to drop by so I could fill you in on the quickest, most delicious “oatmeal-not-oatmeal” that takes seconds to make, a few ingredients (not counting water) to mix, and whatever add-ins you can imagine!

Smoothie bowls are a staple for me in the summertime. But a few days ago, I didn’t feel like something smooth and frosty; I felt like a bowl of warm cereal.

Amazingly enough, I was running low on my pantry mainstay, oats. No matter. I wasn’t in the mood for something oat-y. I was craving something Cream of Wheat-ish, but wholesome and satisfying, without the “enriched” wheat (I do admit to having fond childhood memories of the stuff) . . . something I could drizzle with tahini, sprinkle with granola, douse in almond milk, and get my daily dose of greens while I’m at it.

greens powderEnter greens powder. I finally got my hands on this nutritional amazing-ness a few months ago, and now I can’t imagine life without it. I’ve been pepping up my water with it during workouts, whirring it into my smoothies for a green boost, baking it into my breakfast muffins and bars . . . whatever new way I can find to use it, I’m game.

So with coconut flour, ground flax, greens powder, and water at my disposal, I came up with this grain-free “oatmeal” breakfast that’s so quick and satisfying, you’ll be out the door and ready for end-of-summer fun and festivities in no time flat.

Super Quick Green Grain-Free “Oatmeal”

What I gathered together:

1 tablespoon coconut flour

2 tablespoons ground flax

Scoop of greens powder

Water, enough to reach desired consistency  (I didn’t even bother boiling it—just used warm-ish water straight from the kitchen sink)

Sweetener, if necessary (I think I added a smidgen of molasses)

Cinnamon, ginger, or whatever other spices you desire

Add-ins of your choice: your favorite nut butter (I used tahini), granola, nuts/seeds, shredded coconut, chocolate chips, fresh or dried fruit, dollop of yogurt, any type of milk . . . I could go on and on, but you get the idea . . .)

How I threw it together:

Grab a bowl; dump in coconut flour, ground flax, and greens powder. Drizzle in water and stir until it reaches the desired thickness and smoothness you’re aiming for. Add in sweetener, if needed. Mix in any extras. Pour almond milk over it like I did, dig in with a spoon, and enjoy. (Mmmm . . . so good!)
